Plantbased Christmas cake recipe

Because everyone deserves cake at Christmas! This one is thanks to my lovely Mummy.


  • 150g rice flour
  • 150g apricots
  • 100g sultanas
  • 100g glace cherries
  • 100g mixed peel
  • 100g chopped dates
  • 100g chopped walnuts
  • 2 carrots
  • 1 apple
  • 1 orange (using it’s zest and juice)
  • 2 tsp mixed spice
  • 150g brown sugar
  • 125ml sunflower oil
  • 1/2 tsp xanthum gum
  • 75cl water

Method (lots of mixing involved!):

  1. Preheat oven to 140C
  2. Into a large bowl mix together the rice flour, apricots, sultanas, glace cherries, mixed peel, chopped dates and chopped walnuts (make sure all the fruit is well covered in flour to ensure it doesn’t drop to the bottom of the cake!)
  3. Grate the two carrots and the apple and add them into the fruit & flour mix
  4. Add in the mixed spice, brown sugar, orange zest, orange juice, sunflour oil and mix it all up together.
  5. In a separate bowl mix the 1/2 tsp xanthum gum with the 75cl water so that it forms a paste (will look a bit like wallpaper)
  6. Then pour this over the rest of the ingredients and mix it well
  7. Line an 8 inch cake tin with greaseproof paper and pour in your cake mix
  8. Then put the cake in the oven for 3 hours (put a sheet of greaseproof paper over the top of the cake for the first 2 hours to stop it getting burnt and take it off for the last hour so it can brown up a bit)
  9. Once it’s cooked let it cool in the tin, before taking it out and then covering in marizipan and icing sugar.
